ELECTRIC POWERED FOR AN EVEN BAKE

For Roman pizza al taglio, pizza a pala, and other Roman pizza styles, the even bake of the electric Castelli oven provides the greatest consistency, without hot and cold spots.

Castelli ovens are not your typical electric deck oven. These ovens are built for high-hydration dough and therefore store huge amounts of heat in the chamber. Bake constantly & consistently without waiting for the oven floor to recover.

The Castelli family has dedicated their workshop to the development of the ideal oven for Roman pizza. For decades, they have worked hand in hand with the master Roman pizzaioli of the Associazione Pizzerie Italiane to create the perfect oven for perfect Roman pizza.

CASTELLI FORNI: SINCE 1966

Founded in 1966 in Rome, Italy; Castelli Forni is operated and owned by brothers Elio & Emilio Castelli. The company is focused on the production and development of artisanal electric pizza ovens for the Roman pizza industry.

After forging a partnership with the Associazione Pizzerie Italiane in the late ’80s, Castelli Forni began development of its ovens for baking high-hydration pizza dough. At the time, typical electric pizza ovens in Italy were designed to bake 50-60% hydration pizza dough. The additional dough mass and humidity levels would quickly pull the heat from the floor and render the oven temporarily unusable. 

With the guidance of Angelo Iezzi, president of the API, Castelli Forni experimented with a number of oven designs throughout the following decade. The result of these efforts became the Taglio oven series and Roma oven series: the Taglio series being the ideal oven for “pizza al taglio” production, and the Roma series providing a modular chamber system which could be customized for “pizza alla pala”, “pizza tonda”, and “pizza al taglio”.

Castelli Forni ovens are now synonomous with pizza in Rome, and have become the oven of choice for almost all of Rome’s most famous pizzerias. One can find Castelli ovens used at the highly-regarded Bonci Pizzarium; or the multi-national Roman pizza chain Alice Pizza, with hundreds of locations throughout Europe.
